Upgrade Application Insight Java 2.x SDK to 3.x

We were missing logs in Azure Application Insights when pulling back M23 changes and upgrading to Spring6, this set of changes were suggested in the discussion with MSFT team and after applying the changes, we can see logs with proper custom dimensions showing up in AppInsight again
