Update Jupyter notebook demo

I tried to execute Jupyter notebook demo and faced a few issues:

  1. WPC payloads don't pass schema validation
  2. Some reference-data records mentioned in the WPCs don't exist in the data-definition repository
  3. Data-partition-ids are hardcoded in the parquet files. It resembles this issue
