Deployment - Update GridGain version to address Log4J vulnerability

As a GCZ Developer, I want to update the GridGain version being used by GCZ in order to address a Log4J vulnerability reported by Microsoft Azure and AWS

Acceptance Criteria:

• GCZ version of GridGain updated to 8.8.27
• GCZ smoke tested to work with updated version of GridGain
