Fix: restore replace of pd.na values by str("NaN") to let pydantic  transform dict to json correctly

Fix: exclude explicitly bool and string dtypes and return empty dataframes + add test case to verify empty stats are handled properly by returning empty stats

Fix: before casting into string type, add NaT (not a time) value in case only datetime are used as input
