Updating the README to reflect the fork

David Diederich requested to merge update-readme into main

Primary changes:

  1. Remove references to the "Default UI", since we are not the default. Either the "UI" project, or the "UI for The Open Group", as appropriate
  2. Update URLs to reference this project
  3. Change first person references to "The Antora Project", so as not to imply that we are the ones speaking / making recommendations
  4. Add our copyright as secondary to OpenDevise's
